Cashew-Lime Chicken

Because you asked...

(From Quick Fix Meals by Robin Miller)

1 cup rice, cooked
1 tsp peanut oil
1 tbsp peeled and minced ginger
3 cloves garlic, minced
1 1/4 lbs chicken, in bitesized pieces
1/2 tsp salt
1/4 tsp pepper
1 1/2 cups chicken broth
1/4 cup hoisin sauce
1 tbsp lime juice
1 tsp finely grated lime zest
1 cup cashew pieces

Heat oil over medium-high heat. Add ginger and garlic and cook, stirring, one minute.
Add chicken and cook until browned on all sides, about 5 minutes.
Add salt and pepper and stir.
Add broth, hoisin, and lime, stir and bring to simmer.
Partially cover the man and simmer until chicken is cooked through and sauce slightly thickens, about 8-10 minutes.

*You can cool this and refrigerate up to three days.

Serve chicken over rice and top with cashews.

My husband loved this the way it was, but next time I will use less broth and hoisin :)

*edited to add- you can partially cover the man if you want, but I don't think it will help in the cooking of dinner. You'd probably better partially cover the pan instead.

Menu Plan Monday

I got the new cookbook "Quick Fix Meals," which I am loving, and most of my recipes come from it this week :)

Monday- Potato Cheddar Soup, Baby Spinach Salad (uses leftover mashed potatoes from last week)
Tuesday- Teriyaki Chicken with Soba Noodles, Broccoli
Wednesday- Leftovers
Thursday- Focaccia with Capicola, Mortadella, Salami and Provolone, Ministrone Soup
Friday- Steak, Sauteed Mushrooms, Salad with Strawberry Pecan Dressing
Saturday- Cashew-Lime Chicken and Rice, Sugar Snap Peas

Menu Plan Monday

Ok, late in the day on Monday, but hey, I'm still planning!

Today- Leftovers!
Tuesday- Beef n Broccoli, Rice (I have the meat already cut and marinaded in the freezer from last week!)
Wednesday- BBQ Pork Sandwiches
Thursday- Chicken Pot Pie
Friday- Pork Chops with Apples (still need to find a recipe for this, though!)

I was flipping through channels while nursing this week, and discovered Quick Fix Meals on food Network. Have you seen this? She makes one meal, and then uses some of the ingredients in other meals throughout the week. I am definitely going to try some of her recipes after my next big grocery trip!

Monday- Grilled Cheese and Tomato Soup
Tuesday- Pork Chops and Orange Rice, Salad
Wednesday- Tuna Melts, Salad
Thursday- Crockpot Chicken Soft Tacos, Refried Beans
Friday- Beef and Broccoli, Rice

Menu Plan Monday

I'm still trying to learn how to organize my day with three kids, so I'm going to try and keep it a little bit simple this week!

Monday- Ham and Cheese Quiche
Tuesday- Steak, Rice and Veggie
Wednesday- Slowcooker Chicken Soft Tacos
Thursday- Slowcooker Oriental Chicken and Rice
Friday- Fajitas

Hopefully some of those meals work out and we don't end up eating cereal or pizza every day :)

Menu Plan Monday


 


Well, with kids getting sick last week, we ended up with takeout several times, and I forgot about the large roast in my fridge and had to throw it away :(  Oh well, these things happen when we get sick!  Here's my plan for this week, with a few carry-overs from last week!


 


Monday- Cheeseburger Casserole, Salad


Tuesday- Salmon Burgers (using canned salmon), roasted potato wedges, carrots


Wednesday- Meatloaf, noodles, broccoli


Thursday- Leftovers


Friday- Crockpot Chicken of some sort, rice


Saturday- Enchiladas, black bean and corn salad

Menu Plan Monday

Well, Luke started throwing up today, so I am going to try and keep things simple this week in case the virus goes around the family...I already have several of these meals in the freezer since I often make double and freeze one.


 


Monday- Grilled chicken, broccoli and rice casserole


Tuesday- Chicken Tetrazzini and salad


Wednesday- Chicken Fajitas


Thursday- Salmon Burgers and something


Friday- Hamburger and Cheese Casserole


Saturday- Beef Enchiladas


 


And if I end up getting the virus, then we'll be eating Mac n Cheese and McDonald's all week, LOL.

Menu Plan Monday

I saw this idea on grace4today's website, but it originally started with orgjunkie.  She is hosting "Menu Plan Monday" and since I usually have a few dishes in mind for the week, but don't really plan them, I thought I'd try it out!  Here is my menu for the week...



Mon- Chicken Tetrazzini and Salad


Tues- Beef and Broccoli with Teriyaki Bown Rice


Wed- Hopefully leftovers if dh doesn't eat them all for lunch!  I also have to make a dessert for our small group that night


Thurs- some kind of crockpot chicken and potatoes.  I need to find a recipe


Fri- Baked Chicken Parmesan with Salad and Strawberries (from the menus4moms website)


Sat- Beef and Peppers with rice
